Initial stability is important and having to be on guard all the time makes no beginner into a better paddler. When Dennis paddles your boat and says it has no initial stability, that's a pretty reliable opinion. I've seen this numerous times when beginner paddlers get a boat with decent initial stability and their whole paddling experience changes dramatically for the better and they get good fast. Good move and congratulations on whatever you got. Three women at the lake on Weds made enormous growth with a change of boats.
